Katogo - Kampala Sanctuary Recipe

Katogo is a traditional Ugandan delicacy that is enjoyed for breakfast. It mainly consists of Matooke (green bananas) mixed with different sauces like vegetables, meat, or plain groundnut paste.

INGREDIENTS

  • 5 – 7 peeled green bananas (Matooke)
  • ½ lb beef
  • 3 medium sized tomatoes, chopped
  • 1 onion, chopped
  • 9 oz boiled beans
  • 9 oz groundnut paste
  • 2 green bell peppers, chopped
  • Salt
  • 1 tsp curry powder
  • 2 cups water
  • Cooking oil

DIRECTIONS

  1. Peel, chop, and clean your green bananas and set them aside.
  2. Add oil to a sauce pan and sauté onions until they turn a brownish color.
  3. Add in chopped tomatoes, stir for 1 minute.
  4. Add green bananas and continue stirring for another one minute.
  5. Add two cups of water and cook for 8 minutes under medium heat.
  6. Add in the curry powder and chopped green bell peppers, stir.
  7. Add in the groundnut paste and beef (Tip: when adding in the meat make sure it is almost fully cooked before mixing it in with the other ingredients)
  8. Let cook and simmer for 2.5 hours.
  9. Serve and garnish with any desired fresh spices like coriander, avocado, ghee.
  10. Enjoy with black tea, coffee, rice, or flatbread!
